Andrew and Matthew, the owners of finefish, share a passion for fresh seafood and produce. Both professionally trained chefs, they honour quality food and have a desire to make purchasing and preparing fresh, sustainable, local seafood easy and accessible for everyone. The finefish tale began with leading Sydney seafood wholesaler, Martin’s Seafood’s, who supply award-winning restaurants such as est. Restaurant, The Bridge Room, The Bather’s Pavilion, and Restaurant Hubert. An overwhelming demand from the general public to provide the same quality seafood inspired Andrew to open finefish in 2007 – a venue where the public could enjoy quality Australian fresh seafood, make informed seafood choices and support the fishermen and communities that promote sustainable practices.
